In the hamlets of Savoniero and Susano in the municipality of Palagano, nestled along the green slopes of the Val Dragone that furrows the Modenese Apennines from the border with Tuscany, halfway between the ridge of Mount Cimone and the Cusna chain, in a strip ranging from 600 to 900 metres above sea level, there are eight small farms that, associated, give body to the ‘Cooperativa Casearia di Savoniero e Susano‘.
The aim of the Cooperative (matriculation number 2981) is the production of excellent milk that will become Parmigiano Reggiano, as well as producing butter and ricotta cheese at the top in terms of product quality and genuineness.
That is why we farmers, mostly young people, who make up these eight farms love to spoil and pamper our dairy cows (of typical mountain breeds: from Bruna Alpina to Bianca Modenese) by feeding them the best fodder essences in which our mountains are rich
We carry out this activity as hard work, starting before dawn every day and ending after sunset, but above all as a true vocation lived with enthusiasm, strengthened by the wisdom and experience of our fathers.
The result of all this, combined with the skill of the cheesemaker and the search for the highest quality, is a Parmigiano Reggiano that we consider and demand excellent. Our commitment has been repaid, over the many decades of activity, by various awards.
