12 months is the longest minimum maturation period for a PDO cheese. At this stage of maturation, Parmigiano Reggiano has a sweet and sour flavour, with delicate hints of fresh milk, yoghurt and butter, accompanied by vegetal notes of grass and boiled vegetables. Already at 12 months, Parmigiano Reggiano is naturally lactose-free and has a very light straw-yellow colour. Small crystals of tyrosine, an amino acid, begin to appear in the paste, an indication of maturation, which crystallises in free form.
